Sandwich of the week - Gourmet Fish Finger

I’ll admit there is a place for the humble fish finger sandwich is its simplest form – shoving them between two slices of white bread with a load of ketchup is sometimes great. But then, there so many ways you could improve on this recipe to make something more gourmet yet equally satisfying – so here’s my suggestion:
First, cook three or four fish fingers in the oven. Take a fresh ciabatta roll (or, as I used, a sesame seed panini) and spread liberally with tartare sauce on both sides. Then lay the fish fingers out on once side and add a couple of slices of swiss cheese on top. Finally use a sandwich grill to nicely toast the bread and melt the cheese in the middle. Beat that!
