Rare roast beef & pesto ciabatta

Let’s face it, the Italians know a thing or two about great food and this sandwich uses some fantastic fresh Italian ingredients to complement a British favourite.
Firstly you’ll need to get some cold, sliced, rare topside of beef – this is best bought from a deli counter straight from the joint. Then get a freshly baked ciabatta roll, crispy on the outside and light and airy on the inside. Take some fresh green pesto and mix a dollop of this with a dollop of mayonnaise and spread on both sides of the roll. Add a generous amount of the beef on top. To give this some extra Italian bite, add some shavings of fresh parmesan cheese and a handful of rocket leaves.
