Roast chicken and guacamole sandwich

This was a possibly the second best leftover sandwich I’ve ever eaten. It was only beaten into second place by the traditional Christmas dinner leftover sandwich, which as we all know is the undisputed champion (more to come on that later in the year…)

For this sandwich I used the last few slices of a roast chicken with lemon & thyme, but any type of chicken would do. I also used store bought guacamole, leftover from a heap of nachos I had for lunch – but obviously I would recommend making your own guacamole. All you need for this is a very ripe avocado, a tomato, a seeded chilli pepper, red onion, garlic, lemon juice and salt – it really is fun to make and tastes so much better. But still, beggars can’t be choosers.

So take two slices of fresh multi-grain bread, spread both sides with a little mayonnaise and then spread the guacamole on top with a sprinkle of black pepper. Add the chicken (as much as you can fit in) then some lettuce and tomato – simple as that. Leftovers are great…
