Sandwich of the week – Bang Bang Chicken Wrap

Bang Bang chicken is something I discovered a number or years ago when ordering it at a Chinese restaurant solely because of the name – it just had to be tried! I thought it was really weird, but it’s totally addictive and since then it’s become one of my favourite dishes. But handily for the purposes of this blog, it’s not just a great Chinese starter, but can also be a great sandwich.

To make bang bang sauce, take a spoonful or two of smooth peanut butter and mix this in a bowl with a splash of sesame oil and rice vinegar (if you have any) and a dollop of sweet chilli sauce until you have a nice paste. Then thinly slice some cucumber and carrot and put this on one side. Normally the chicken for this dish is served cold and shredded, but any sliced or grilled chicken would work fine for this sandwich.

Heat a tortilla wrap and spread the shredded cucumber and carrot out. Add the chicken on top and then smother this in the sweet peanut paste. A few sesame seeds taste great on the top too. Then just roll up and enjoy. Weird, but addictive right? I told you!
